Nothing about the day looks or feels different. Your photographs show a wedding, because it is one. The only thing that changes is where the stamped certificate lives, and nobody has ever framed the certificate.
Where are the best places to elope in Saint-Tropez?
Privacy is the whole game, and the peninsula offers four very different kinds of it.
A villa terrace above the bay
The hills of Gassin and Ramatuelle are full of rental villas whose terraces look straight down onto the Bay of Saint-Tropez. Renting one for two or three nights solves accommodation, ceremony spot, portrait location and dinner venue in a single decision, and the entire day happens on ground that is yours alone. Vows at the balustrade, portraits in the evening light, dinner as the lights of the port come on below. A yacht at anchor off Pampelonne
Charter a boat for the day, anchor off Pampelonne, and the sea becomes the venue. Vows on the foredeck, a swim if you want one, portraits at the bow as the light turns gold, dinner served at anchor. No location on land can match the privacy, and the moving light on the water does half of our job for us. The captain handles the only logistics that exist.
The coastal path and Plage des Graniers at first light
The sentier du littoral leaves the village at Plage des Graniers and runs along rocks, pines and coves where there are very few people before 10am. A morning ceremony on the flat rocks, then breakfast back in the village, is the least expensive and most discreet version of a Saint-Tropez elopement, and the light on the water at that hour photographs better than most terraces at noon.
The lanes of La Ponche
For couples who prefer stone to sea, the old fishing quarter of La Ponche is a maze of narrow lanes, shutters and staircases that lives on indirect light and works at any hour, the only setting in the village that does. Exchange vows in a quiet corner of the quarter early in the morning, then walk down to the Quai Jean-Jaurès for portraits in front of the ochre facades once the light rakes across them in the late afternoon.

When should you elope in Saint-Tropez?
Late May to mid-June, and mid-September to mid-October, without much debate. Both windows offer warm sea, soft light and a village that is open but not overrun. July and August still work, but only with discipline: a sunrise ceremony before the coast wakes up, or a fully private setting like a villa or a boat. One date to plan around: Les Voiles de Saint-Tropez fills the village in late September, magnificent as a backdrop, busy as a venue.

How does the day actually run?
Slowly, which is the point. A day built for two people has no timetable pressure, so the only fixed anchor is the sun. A typical shape, on a June date with a 21:15 sunset:
